Cauliflower and Kohlrabi Mash

The horseradish gives this creamy dish a kick. Great side with a grilled steak or pork chop.

3 c. small cauliflower florets and chopped stems

1 - 1 1/2 c. small diced kohlrabi

1/4 c. plain yogurt

1/8 - 1/2 tsp. horseradish (to your taste)

2 Tbsp. minced chives, green onion tops, and/or parsley or carrot tops

Salt and pepper

Steam the cauliflower and kohlrabi (together in the same basket) until soft.

Mash them with a potato masher or fork for a lovely rustic mash. If you prefer, use a blender to make dish somewhat creamier.

Combine the yogurt, horseradish and chives/onions/parsley in a bowl. Start with less horseradish, adding more until you reach the ratio that's right for you. Stir into the mashed vegetables, and serve warm.
