Stir Fried Snow Peas


Snow peas are the epitome of the perfect, minimalist vegetable. Crisp, sweet, and absolutely divine.

They become extra sweet when cooked- and cooking them is quick. Very quick. They'll be done in about one minute, so it's important to have this be the very last thing you do before serving your meal.

2 tsp. peanut or other high-heat oil

1/2 - 1 clove garlic, minced or pressed

2-3 c. snow peas (a few large handfuls)

Salt and pepper

Over medium-high heat, saute the garlic for about 30 seconds in the oil; add the peas and saute about 1 minute longer, or until they turn bright green. Season with salt and pepper.

Optional: If you're inclined to add just a little something- try a tiny splash of lemon juice, a sprinkle of toasted almonds, and/or a pinch of red pepper flakes; all are good enhancements.
