Grilled Cilantro-Lime Chicken with Green Beans & Tomatoes


This tasty grilled dinner is a snap, especially when you marinate the chicken in advance!

¼ - ½ c. snipped cilantro, to your taste

1 small clove garlic, minced or pressed

2 Tbsp. lime juice

2 tsp. honey

Olive oil

2 skinless, boneless chicken breasts

Salt and pepper

½ lb. green beans, trimmed

1 medium tomato, cut in large bite-sized chunks

In a small bowl, whisk together the cilantro, garlic, lime juice, honey, and 2 Tbsp. olive oil. Pour half of the mixture into a little bowl or jar and set aside in refrigerator. Pour the other half into a Ziploc bag along with the chicken breasts and turn until the chicken is well coated. Allow to marinate in the refrigerator for at least 30 minutes, or leave overnight.

Remove chicken from bag, season with salt and pepper, and grill on a preheated medium-high grill until it is cooked all the way through, and juices run clear- about 5-6 minutes per side.

Meanwhile toss the green beans and tomatoes with 1-2 tsp. olive oil and season with salt and pepper. Grill until they are tender and a little charred.

Place chicken breasts and vegetables on a platter or serving plates and drizzle with the reserved dressing.
