Delicious with grilled fish.
1 c. bite-sized cantaloupe cubes
1/4 c. chopped red onion (or green, or sweet)
1-2 Tbsp. snipped cilantro
1 Tbsp. olive oil
1 Tbsp. lime juice
1 Tbsp. minced jalapeno, or other hot pepper
Salt and pepper
Combine cantaloupe, onion, cilantro, olive oil, lime juice and peppers in small bowl. Season with salt and pepper to taste. Let stand 10-15 min. to allow flavors to meld.
Note: If you have a sweet salsa recipe in your file that calls for mango, try substituting cantaloupe for the mango. Delish!
