Strawberry Fennel Salad


A delightful, sweet salad. One of our favorites in spring.

½ c. sliced strawberries

¼ c. chopped fennel

½ c. chopped tart apple, optional

2 Tbsp. chopped green onion

1 c. packed greens, such as spinach or chard leaves, stems removed

1-2 Tbsp. snipped mint

Toss all ingredients together lightly with Tarragon Vinaigrette:

2 Tbsp. light oil, such as canola or sunflower

1 Tbsp. white wine vinegar

2 tsp. orange juice

1 tsp. lemon juice

½ - 1 tsp. honey (by your sweetness preference)

½ tsp. dried tarragon (+ more, if desired)

Optional- scatter salad with a handful of toasted, chopped walnuts. Yum!
