Spinach, Pea, and Radish Salad


This is a really good side salad, highlighting some of early summer's favorites!

Salad:

1 c. tightly packed spinach leaves, cut into thin ribbons (I stack the leaves and cut with scissors)

1-1 1/2 c. shelled peas

4-5 thinly sliced small radishes

2 Tbsp. thinly sliced spring onions

Chive Dressing

2 Tbsp. plain yogurt

1 Tbsp. minced chives

1 Tbsp. olive oil

Salt and pepper to taste

Combine salad ingredients in a medium bowl.

Whisk dressing ingredients together in another bowl, then toss together.
