Zucchini Roll Bites


A zucchini wrap! Always a hit when I serve these. Great for a light lunch on the go, an appetizer or snack; easy enough to make for a crowd.

Cut zucchini lengthwise in long, very thin “slabs” using a peeler or mandoline.

Spread each slab with mayo, soft cheese, mashed avocado, or spread of your choice. Add a thin layer of tiny minced vegetables, snipped herbs, thinly sliced turkey or ham, cheese, whatever suits you. Roll up and hold in place with a toothpick if needed.
