Penne Pasta with Marinated Cherry Tomatoes


Scrumptious summer simplicity.

1 c. cherry tomatoes, halved

1 clove garlic, minced or pressed

1-2 Tbsp. olive oil

Salt and pepper

½ lb. penne pasta

¼ c. snipped fresh basil

3-4 oz. fresh block mozzarella or other mild white cheese, small cubed

Combine the tomatoes, garlic, and olive oil in a bowl and season with salt and pepper. Set aside for 20-30 minutes to meld flavors.

Meanwhile, cook pasta al dente according to package instructions. Drain.

Lightly toss the marinated tomato mixture, basil, and cheese cubes with the warm pasta in a bowl and serve.
