Green Beans & Caramelized Onions


1 Tbsp. olive oil

1 c. thinly slivered onion (cipollinis are delicious!)

1 small clove garlic, minced or pressed

1 lb. green beans

Salt and pepper

Saute the onion and garlic over low-medium heat in a covered skillet for about 10 minutes, or until the onion is tender. Add a splash of broth or wine if skillet gets too dry.

Uncover, turn up the heat, and cook another couple of minutes, stirring often, until the onions are golden.

Meanwhile steam the beans just until crisp-tender- about 5-7 minutes- or longer if you like your beans cooked a little more.

Add the beans, and season with salt and pepper to taste.

Optional additions: 1 small-medium tomato, diced and/or a pinch of dried basil or oregano.
