Kohlrabi and Broccoli Stalk Slaw Salad


This is a tasty little side salad, or accompaniment; try spooning into a fish taco or veggie wrap. I like this as a monochromatic salad, but if you'd like a little color, you could add a sprinkling of other matchstick-style cut vegetables like radishes and carrots.

Mix together in a bowl:

1 c. matchstick-style cut kohlrabi

1 c. matchstick-style cut broccoli stalks

Whisk together:

1 Tbsp. tamari or soy sauce

2 tsp. rice vinegar

2 tsp. sunflower or canola oil

1 tsp. toasted sesame oil

¼ tsp. grated fresh ginger

Pinch red pepper flakes

Toss the dressing into the kohlrabi and broccoli matchsticks. Cover and

refrigerate for 1-2 hours before serving to allow flavors to blend.

Optional garnishes:

1 Tbsp. finely minced cilantro or parsley

Toasted sesame seeds
