Summer Squash & Corn Pizza
A very yummy summer pizza.
1 Tbsp. olive oil
1 small garlic clove, minced or pressed
1 prepared pizza crust (or pita or naan rounds)
1 - 1½ c. thinly sliced summer squash half-moons
¾ - 1 c. corn
3 -4 Tbsp. slivered green or red onion (or other mild onion)
1 tsp. dried thyme
Salt and pepper
½ - ¾ c. shredded mozzarella
Preheat oven to 425.
Combine the olive oil and garlic, and spread over pizza crust.
Top with a single layer of zucchini, scatter with corn, and finally, add the onion.
Sprinkle with thyme, salt and pepper, and cheese.
Bake for 10-12 minutes, or until hot and browned.
