Asparagus, Radish & Mint Salad


Great paired with grilled chops.

Vinaigrette:

2 Tbsp. olive oil

1 tsp. honey

1 Tbsp. white wine vinegar

1 tsp. lemon juice

Salad:

2-3 large handfuls baby/micro greens, spinach, &/or pea shoots

1 c. ½” bias-cut asparagus pieces

1 Tbsp. finely chopped spring onion

2-3 quartered radishes

1/4 c. finely chopped mint leaves

2 Tbsp. crumbled mild goat or feta cheese

Whisk together vinaigrette in a small bowl. Combine salad ingredients in another bowl and then toss with the vinaigrette.
