Roasted Asparagus and Radish Medley


This is our favorite springtime side dish! So easy and incredibly delicious.

If you have them, substitute 1-2 chopped ramps for the onion and garlic.

Makes 4 side dish portions.

Preheat oven to 375.

Toss together in a bowl:

About 2 c. asparagus, cut in 1" - 2" pieces

3-4 quartered radishes

1-2 green onions, chopped

1 small clove garlic, minced

1 Tbsp. olive oil

Salt and pepper to taste

Spread, single layer, on a rimmed baking sheet. Roast for 10-12 minutes, or until just very lightly browned.
