Asparagus with Lemon and Mint


Lemon, mint, and chives work together in this dish to really bring out the best in spring-fresh asparagus!

1 lb. asparagus

2 Tbsp. butter

1 Tbsp. finely chopped green onions

1 tsp. lemon juice

1 tsp. lemon zest

1/4 tsp. salt

2 tsp. finely chopped mint leaves

1 Tbsp. finely chopped chives, optional

Steam the asparagus until crisp-tender. Meantime, sauté the scallions in butter for 1-2 minutes, then add the rest of the ingredients and stir to warm. Gently toss with the warm asparagus and serve.
