Sweet N’ Snappy Minty Peas
A little tangy, a little sweet! Yummy!
1 Tbsp. olive oil
1 Tbsp. chopped green onion
1/2 lb. snap peas (remove tops and side strings)
2 tsp. rice vinegar (or mild white wine vinegar, if you need to substitute)
1 tsp. honey
1 Tbsp. mint leaves, finely chopped
Saute green onion in olive oil until soft, about 1 minute. Add peas and cook quickly for 1 more minute. Whisk the rice vinegar and honey, then add to peas, tossing until well blended. Peas should remain crisp-tender.
Remove from heat and toss in mint. Add salt and pepper, to your taste.
Serve right away.
