Watercress Salad Dressing

This is really good over salad greens or tossed into a shrimp salad.

Whisk together or blend in a mini food processor:

2-3 tsp. lemon juice or mild vinegar (to your taste)

1/4 c. olive oil

1/4 c. finely minced watercress, tightly packed

Salt and pepper

An easy leftover shrimp salad: Chop some leftover cooked shrimp and mix with chopped celery, cucumber, green onion, fresh or dried dill, (+a little leftover rice or pasta?), and toss with this dressing.
