Chicken and Spinach-Radish Salad Pizza


A favorite in our house.

1 prepared thin pizza crust

Olive oil

1/2 c. crumbled feta or goat cheese

1+ c. torn or chopped cooked chicken

1/2 c. shredded Swiss cheese

2 tsp. white wine vinegar

1/4 tsp. Dijon mustard

1 c. rough-chopped fresh spinach, tightly packed

1/3 cup thinly sliced radishes

Preheat oven according to crust instructions.

Brush entire crust lightly with about 1 Tbsp. olive oil. Scatter with feta or goat cheese and chicken, leaving 1/2" border around edges. Then sprinkle with the Swiss cheese.

Bake according to pizza crust instructions, or until golden brown.

Meanwhile, whisk together the white wine vinegar, Dijon mustard, and 2 tsp. olive oil.

Combine spinach and radish slices in a bowl, and toss with the vinaigrette.

When pizza is done, remove from oven, and immediately top with the dressed spinach salad so that spinach just slightly wilts. Slice and enjoy!
