Kohlrabi White Bean Salad with Horseradish-Mustard Dressing
I’m a fan of kohlrabi, mustard, and horseradish. It’s a winning trifecta, really highlighted in this salad.
Combine in a bowl:
2-3 Tbsp. thinly sliced spring onion (shallots or red onion would be ok too)
1½ c. shredded kohlrabi (like you would a carrot; matchstick style)
1 c. cooked cannellini or white kidney beans (canned is fine)
Whisk together and toss into kohlrabi mixture:
¼ c. mayo
2 Tbsp. Dijon mustard
1 Tbsp. capers, optional
1 Tbsp. well packed, snipped fresh dill (or 1 tsp. dried)
1 Tbsp. horseradish sauce
2 tsp. olive oil
½ tsp. salt
A good dash of black pepper
1 tsp. red wine vinegar
½ -1 tsp. honey
Cover and refrigerate until ready to serve.
