Kohlrabi Salad with Avocado Dressing


This is a very refreshing salad; the kohlrabi makes it special.

Combine in a bowl:

3 - 4 c. matchstick-style cut kohlrabi

1/2 - 1 c. slivered/matchstick cucumber, carrots, zucchini, or other mild slaw-style veggies

Puree together

1/2 avocado

3 Tbsp. olive oil

1 Tbsp. apple cider vinegar

3 Tbsp. plain Greek-style thick yogurt (or sour cream)

1 Tbsp. snipped fresh basil or tarragon (or 1 tsp. dried)

1 Tbsp. snipped fresh parsley, optional

1 tsp. snipped fresh chives, optional

Toss desired amount of dressing with vegetables

Tip: stack veggie slices and then cut into matchsticks
