Strawberry Salad with Ginger-Onion Dressing
1-2 green onions, trimmed and chopped
2 Tbsp. olive oil
1/2 tsp. minced fresh ginger
3/4 tsp. lime juice
1 tsp. honey
Salt and pepper
Blend until smooth in blender or food processor. Adjust seasoning to your taste, and set aside.
1/4 lb. greens (several very large handfuls)
1/2 - 1 c. halved or quartered strawberries
1 hard-boiled egg, cut into small wedges, optional
Handful of unseasoned med-large croutons, optional
Toss greens with the dressing and divide onto serving plates. Scatter the strawberries on top (eggs and croutons too, if using). Enjoy!
