Strawberry Mint Quinoa Salad


This is a deliciously fresh and light summer salad, with two dressing options for you. We usually prefer Vinaigrette #1, but #2 is a nice change up and really accentuates the flavor of the strawberries.

Salad:

1 c. leafy greens, baby sized or rough-chopped

1 c. cooked quinoa

1/2 c. sliced strawberries

2 Tbsp. finely chopped green onion

1/4 c. crumbled feta or goat cheese

1/4 c. finely snipped mint

2 Tbsp. toasted, small-chopped walnuts or *pecans (optional)

Mix the salad ingredients together in a bowl and toss with one of the vinaigrettes below.

The salad made with Vinaigrette #1 is wonderful as a do-ahead; flavor improves with time!

*Trader Joe’s sells reasonably priced and very fresh pecans that are already finely chopped AND toasted. They also sell microwaveable bags of quinoa in the freezer section to help make this salad super quick!

Vinaigrette 1:

2 Tbsp. olive oil

2 tsp. lemon juice

2 tsp. white wine vinegar

1/2 tsp. honey

1/4 tsp. pressed garlic (or 1 tsp. finely chopped garlic scapes)

Salt and pepper to taste

Whisk together.

Vinaigrette 2:

1/4 c. chopped strawberries

2 Tbsp. olive oil

1 Tbsp. balsamic vinegar

Combine in a mini food processor or blender.
