A great accompaniment with meat, fish or seafood.
1 Tbsp. butter
2 c. thinly sliced, peeled cucumbers
1/4 c. thinly sliced sweet onion
1/4 c. heavy cream
1 Tbsp. snipped dill
Salt and pepper
Melt the butter; add the cucumbers and onion and saute until the cucumbers are crisp-tender, about 5-7 minutes.
Stir in the cream, dill and salt and pepper to taste. Bring to a low boil, stirring constantly to thicken the sauce, about 1-2 minutes. Serve warm.
