Baked Parsley-New Potatoes


This is a twist on the classic.

10-12 small new potatoes

1/2 stick softened butter, sliced into small chunks/pieces

1/4 c. shredded parmesan cheese (add a little more if you like cheese)

1 Tbsp. chopped green onion

2 Tbsp. chopped parsley

Half or quarter and steam the potatoes till just fork tender. Combine with the other ingredients and place in a buttered baking dish. Cover and bake in a 350 pre-heated oven for 15 minutes, then remove cover and bake about 15 minutes more, until turning slightly crispy.
