Maple Roasted Whole Cauliflower

A sweet and spicy twist on roasted cauliflower, with the bonus of a really cool presentation!
1 small-medium whole head cauliflower
1/3 c. maple syrup
1/4 tsp. cumin
1 Tbsp. grated fresh ginger
2 tsp. lemon juice
2 tsp. sesame oil
Salt and pepper to taste
Preheat oven to 375.
Combine all ingredients except cauliflower and set aside.
Cut a 1/4”-1/2” deep cross in the bottom core of the cauliflower (to help it cook evenly). Place, core side down, in a small baking dish. Pour the maple syrup mixture over the cauliflower and use a brush to help spread evenly over all like a frosting. Add 3/4 -1 c. water to the bottom of the dish, put in the oven and roast for about 30 minutes, or until well browned.
To serve, cut into wedges.
