Cucumber Tomato Salad with Mint


This is a wonderful, cool summer salad. We love it as a burger side.

1 cucumber, peeled and cubed (½” – 1”)

2 Tbsp. red wine vinegar

1 Tbsp. honey

1-2 spring onions (or a few very thin red or sweet onion slices)

2 cups cherry tomatoes, cut in half ( or 2 c. diced tomatoes)

2 radishes, thinly sliced, optional (or substitute with 1 small carrot)

¼-½ cup mint, finely snipped or chopped (depending on how intense you want mint flavor)

1 Tbsp. olive oil

Marinate cucumber for about an hour in the vinegar and sugar.

Add remaining ingredients, refrigerate and enjoy!
