Cucumber Hot Pepper Salad
A cucumber salad with a sweet and spicy kick!
1 large cucumber, peeled
3 spring onions
1-3 hot peppers, to your taste
Zest and juice of 2 small limes
1 Tbsp. light soy sauce
1 Tbsp. maple syrup
1 Tbsp. roasted peanut oil
1/4-1/2 c. roasted peanuts, rough chopped
1/4 c. snipped mint leaves (and/or basil leaves)
Using a vegetable peeler or mandolin, peel off long thin slices from cucumber. Combine with onions and peppers in a bowl.
Whisk together lime zest and juice, soy, sugar and oil. Toss with vegetables
then add peanuts and herbs and toss again.
