Roasted Zucchini Tomato Sandwich


A mighty fine sammy!

Thinly sliced zucchini

Thinly sliced tomato

Salt and pepper

Olive oil

Thinly sliced avocado

Alfalfa or broccoli sprouts, optional

Mayonnaise or cream/soft/goat cheese, or a blend of half & half of each

Herb sprigs, like dill and/or basil

Sandwich bread

Slices of mild cheese, optional

Lay slices of zucchini and tomato on a parchment lined, rimmed baking sheet; season with salt and pepper and drizzle with a little olive oil. Roast in a preheated 425 oven for about 15-20 minutes, or until tender. Or you can grill the vegetables.

Spread the bread with mayo and/or cheese, and layer bottom slice with tomatoes and zucchini, avocado, sprouts, herb sprigs, and cheese if using.

Top with the other bread slice and enjoy!
