Turnip Salsa


This is a sweet salsa, and has a pretty presentation -excellent with salty chips. If you like it sweet AND spicy, add a bit of minced hot pepper, like jalapeno.

½ c. finely diced turnip*

Salt

1 small apple, peeled and finely diced

1 Tbsp. finely diced sweet red pepper

2 tsp. lime juice

½ tsp. honey

1 tsp. snipped cilantro

Place the diced turnip in a sieve over the sink, sprinkle with about ¼ tsp. salt (a few good dashes), and toss to coat. Allow to drain for 15 minutes, then put into a paper or cloth towel and squeeze out any excess moisture.

Combine turnip, apple, and pepper in a bowl. Whisk together the lime, honey, and cilantro and toss into salsa.

*As an alternative to dicing turnip, try grating on the largest hole– it creates a really nice, interesting texture for the salsa. Peel turnip but leave the stem base on –it will serve as a “handle” for you when grating.
