Beans, Peppers, and Basil Salad
Quick and easy salad that incorporates some of summer's best- very tasty!
3-4 c. trimmed green, yellow, and/or purple beans, steamed to crisp-tender
1-2 bell peppers
1 c. cherry tomatoes, halved
10-14 fresh basil leaves, snipped
2-4 Tbsp. other mixed fresh herbs, such as oregano and parsley (or add more basil, or 2-3 tsp. dried herbs)
Combine in a large bowl and toss with vinaigrette below, or another of your choice.
2 Tbsp. red wine (or sherry) vinegar
2 tsp. Dijon mustard
Juice and zest of ½ a lemon
½-1 tsp. honey, to your taste
2 Tbsp. olive oil
Salt and pepper to your taste
