Chinese Cabbage Slaw with Spicy Cilantro Dressing


1/4 c. rice or white wine vinegar

2 tsp. honey

1 tsp. grated or minced fresh ginger

2 tsp. light vegetable oil

1 Tbsp. sesame oil

1/2 - 1 jalapeno pepper, minced

Salt

1 medium head Napa (or other green) cabbage, shredded

3 spring onions, sliced

1 large carrot, grated

1/4 - 1/2 c. snipped cilantro (to your taste)

Whisk together vinegar, honey, ginger, oils, pepper, and season with salt.

Add remaining ingredients and toss well. Let stand, tossing occasionally, 10 minutes.
