BBQ Chicken Pizza with Onions & Peppers


I used to think recipes like this were cheating. But I was wrong. It's reality! We sometimes need something lightening fast, and yes, that might mean we'll use a couple of prepared ingredients.

So long as the result is healthy and delicious, I say, no harm, no foul!

1 prepared pizza crust

Olive oil

1/4 c. BBQ sauce (less or more, if you want to spread it on thinner or thicker)

2-3 c. shredded rotisserie chicken (leftovers are great here)

1/4 - 1/2 c. very thin red onion slivers

1/2 - 1 c. sweet bell pepper, thinly sliced

1/4 - 1/2 c. corn kernels, optional (frozen is fine)

About 1/2 c. shredded mozarella or other white cheese

Preheat oven to 425.

Lightly brush about a 1" border of crust edge with olive oil.

Spread BBQ sauce on the rest of the pizza.

Top with chicken, onions, peppers, and corn (if using). Scatter with cheese.

Bake for 8-12 minutes, or until browned, and the cheese has melted.

Serve right away.

If you happen to have an avocado on hand, thinly slice and scatter on top when pizza first comes out of the oven, for a little extra creamy richness.
