Skillet Roasted Cauliflower Steaks
We LOVE this tasty, simple side dish, and eat it often!
1 Tbsp. olive oil
1 clove garlic, minced or pressed
Pinch red pepper flakes
1/2 head cauliflower, cut vertically (don't stress, some will crumble)
1/2 - 1 c. halved cherry tomatoes
1-2 Tbsp. capers
Cauliflower leaves, optional
Snipped parsley or carrot tops for optional garnish
Saute the garlic and pepper for a minute in the olive oil, then add the cauliflower, arranging single layer. Season with salt.
Cook the cauliflower until browned, about 7-8 minutes. Turn over each steak carefully, and cook another 7-8 minutes, or until browned and firm-tender.
During the last 3-4 minutes, add tomatoes, capers, and cauliflower leaves, if using. You want them just to soften and wilt.
Serve right away, garnished with parsley, if desired.
