Bacon, Kale and Tomato Salad

All of the great flavors of a BLT come together deliciously in this really tasty salad! Good with all types of kale. It's sure to become a favorite in your household!

Salad for 2:

1/2 bunch of kale leaves, roughly chopped and oil massaged *see below

3-4 slices of bacon, crisply cooked and crumbled

1 c. halved cherry tomatoes, or diced tomatoes

Combine in a large bowl, and toss with whisked dressing below:

Creamy Mayo Dressing:

1 Tbsp. creme fraiche or sour cream

1 Tbsp. mayonnaise

1 tsp. lemon juice

Garnish with croutons if you wish.

*To nicely soften kale, massage the leaves with 1/2-1 tsp. olive oil for a couple of minutes, using your hands.

An Alternative, Change-up Dressing to the Creamy Mayo (transforms salad to a "non-traditional" BLT flavor!)

1 Tbsp. finely minced mild green onion or shallots

2 tsp. apple cider vinegar

2 tsp. olive oil

2 tsp. maple syrup

2 tsp. Dijon mustard

Salt and pepper

When using this dressing, these are nice, optional additions to the salad:

1/4 c. very thin red onion slivers

1 small avocado, peeled and diced
