Golden Beet Slaw


This is a crunchy salad that's good any time of year!

2 Tbsp. olive oil

1 Tbsp. red wine vinegar

1/2 tsp. orange zest

2 tsp. orange juice

Salt and pepper

3/4 –1 lb. raw golden beets, peeled and cut into matchsticks (or spiralized)

1 green onion, thinly sliced (or 2 tsp. minced red mild onion)

3 Tbsp. snipped parsley, carrot tops, or cilantro

Whisk together the olive oil, vinegar, orange zest and juice and season with salt and pepper. Toss with beets, onion, and herbs.
