Raw Tomato Pasta Sauce


This is so satisfying on a summer night, when you are really hungry, but don't want to cook.

1 lb. tomatoes, cored and large diced

2 cloves garlic, minced or pressed

Salt

2 Tbsp. shipped basil ribbons

3 Tbsp. olive oil

Combine in a bowl, cover and allow to rest at room temperature for a couple of hours.

Toss with hot, cooked pasta or spiralized zucchini and sprinkle with grated or shredded parmesan.
