Watermelon, Tomato, and Pickled Onion Salad


Easy peasy-quick pickled onions are delicious in this salad. You might even consider pulling out a couple of onion slivers, and saving them to put on top a burger or sandwich later.

Combine in a bowl, and allow to marinate in the refrigerator 20-30 minutes:

3 Tbsp. red wine vinegar

1 Tbsp. honey

Dash salt

1/3 - 1/2 c. very thin red onion slivers

Combine in another bowl:

2 c. small, bite-sized seeded watermelon cubes

1 c. diced tomatoes (similar in size to watermelon)

2-3 Tbsp. snipped mint

Toss the onions and their marinade juice with watermelon, tomatoes, and mint. If desired, sprinkle with a little crumbled feta.
