Watermelon Tomato Salad with Feta

Cool, sweet and light!

Combine in a bowl:

1 c. small, bite-sized seeded watermelon cubes

½ - ¾ c. diced tomatoes (similar in size to watermelon)

Whisk together in another bowl:

1 Tbsp. olive oil

2 tsp. red wine vinegar

Salt and pepper

Toss the vinaigrette with the watermelon and tomatoes.

Scatter with 2-3 Tbsp. crumbled feta.
