Lemon Basil Pasta


A delicious way to use the beautifully fragrant herb, lemon balm- add chicken and other mild vegetables, like summer squash, if you wish.

Combine in a food processor:

1 c. fresh lemon balm leaves

½ c. olive oil

1-2 cloves garlic

Optional- add these if you want a denser pesto, or wish to use it as a spread:

¼ c. walnuts

¼ c. (or more) parmesan cheese

Stir into ½ lb. cooked pasta, along with 2 c. lightly sautéed tomatoes and

1-2 Tbsp. minced onions. Add more sautéed veggies if you please.

Garnish with a good sprinkle of parmesan.
