Soft Chopped Summer Salad


Chopped salads are easily adaptable; add whatever vegetables you have on hand! The more textures and flavors, the better!

1 c. soft, leafy greens

1 c. thinly sliced zucchini half-moons, or snap peas, green beans cut in 1" pcs.

1/4 c. diced radishes, carrots and/or bell peppers

1/2 cucumber, diced

1 c. diced tomatoes or halved cherry tomatoes

1 c. sweet corn kernels

1-2 tsp. minced green onion or other mild onion

1 avocado, diced (optional)

2 Tbsp. snipped fresh basil

Combine all and toss with whisked vinaigrette:

3 Tbsp. olive oil

1 Tbsp. white wine vinegar

1/2 tsp. honey

Salt and pepper to taste
