Sweet Potato Cake Waffles

2 c. all-purpose flour

1 Tbsp. baking powder

¼ tsp. salt

1 tsp. cinnamon

⅛ tsp. ground ginger

1½ c. milk

¼ c. molasses or maple syrup

½ c. sweet potato, cooked and mashed

1 egg, beaten

Combine the dry ingredients. Add the wet ingredients and whisk until well mixed. Bake in waffle iron according to machine’s instructions.

Serve with Maple Syrup.

Add a splash of Grand Marnier to the syrup for extra decadent yumminess.

And/Or Orange Butter:

Using a mixer, whip a half stick of softened butter together with 1 tsp.

honey and ½ tsp. grated orange zest.
