Sweet Potato Cranberry Bread


2 c. flour

1 tsp. baking powder

1/8 tsp. salt

2 tsp. cinnamon

1/2 tsp. nutmeg

1/2 tsp. ground ginger

2 eggs

1/2 c. light vegetable oil

2/3 c. brown sugar

1 1/3 c. cooked, mashed sweet potatoes, room temp

1/2 c. fresh cranberries

1/2 c. chopped pecans or walnuts

Preheat oven to 350. Grease 9x5 loaf pan.

Combine flour, baking powder, salt and spices in a bowl and set aside.

In another bowl, beat eggs, oil, brown sugar, and sweet potatoes, then fold into the dry ingredients and blend well.

Stir in cranberries and nuts and pour into prepared loaf pan.

Bake for 45-60 minutes or until an inserted toothpick comes out clean.
