Asian-Style Radish and Apple Slaw


Whisk together vinaigrette in a large bowl:

2 Tbsp. rice vinegar

1 Tbsp. tamari or soy sauce

1-2 tsp. honey (to your taste)

1 tsp. sesame oil

Salt

Toss in:

2 small-med. (about ¾ lb.) watermelon or Daikon radishes peeled and cut into ¼” matchsticks

1 small apple, peeled and cut into ¼” matchsticks

2-3 Tbsp. thinly sliced green onions or snipped chives, optional

Cover and refrigerate for about an hour before serving.

Note: if you like spicy, you could add a splash of sriracha, chili paste, or a little minced hot pepper to the vinaigrette.
