Bacon Sauteed Radishes


A tasty side “relish” with pork or chicken.

1 slice bacon

5-6 small (or 1-2 lg. watermelon or daikon) radishes, trimmed and chopped

1 tsp. apple cider vinegar

½ tsp. maple syrup

2 tsp. finely snipped parsley or carrot tops, or radish greens

Salt and pepper to taste

Begin to saute the bacon in a small skillet. After 2-3 minutes, add radishes; cook until the bacon is crisp and radishes are tender. Stir in other ingredients.
