Radish and Apple Salad

Whisk together mustard vinaigrette: 2 tsp. Dijon mustard 1 Tbsp. apple cider vinegar 2 Tbsp. apple cider or juice 1 tsp. honey 2 Tbsp. light vegetable oil Salt and pepper to taste

Combine in a salad bowl: 3-4 radishes, diced 1 small apple, diced Several handfuls of salad greens (or Swiss chard, spinach, kale, beet greens, etc.)

Toss with vinaigrette and serve.

Optional: scatter salad with toasted walnuts
