Radish Cheese Salad


This is a nice, fresh little, tapas style salad. Satisfying and simple.

1 Tbsp. olive oil

1 Tbsp. lemon juice

Salt and pepper

Thinly sliced radishes (cut in half moons or quarters)

Thinly sliced mozarella or feta (about same size as radishes)

Optional snipped chives, green onion, and/or lemon zest for garnish

Whisk together the olive oil and lemon juice, season with salt and pepper.

Arrange the radishes and cheese alternately on serving plates, and drizzle with the vinaigrette. Garnish if desired.
