Lime Splashed Radish Salsa


Very simple salsa; great with chips, in a taco, or as wee garnish on a sweet, creamy soup.

Easy to seasonalize- in spring, add a bit of snipped mint and chopped strawberries; in summer add ingredients such as: corn kernels, minced hot or sweet pepper, and/or snipped cilantro.

Serves 2 amply.

Combine:

1/4 c. small-diced radishes

1/3 c. peeled, small-diced avocado

1 Tbsp. minced green onion

2-3 Tbsp. finely snipped radish greens, spinach, chard, or other greens

2 tsp. lime juice

Salt and pepper to taste.
