Shaved Brussels Sprouts with Mustard Sauce


2 Tbsp. mayo

1 tsp. whole grain mustard (+/- to your taste)

Salt and pepper

2-3 c. Brussels sprouts, trimmed

1 Tbsp. olive oil

1 small clove garlic, minced or pressed

Whisk together mayo and mustard. Season to your taste with salt and pepper and set aside, allowing to get to room temperature. This quantity will lightly dress salad; you may wish to double if you prefer more dressing.

Remove any loose outer leaves from sprouts. Shave the Brussels sprouts with a mandoline, or shred with a knife. Bring olive oil to med-high heat, add sprouts and garlic and allow them to sear, about 30 seconds. Then stir to keep from burning and season with salt and pepper. Continue to saute, about 3-4 minutes more, until all sides are nicely browned. Transfer to serving dish and drizzle with the mayo/mustard sauce. Serve right away.
