Grains and Minty Greens with Maple Syrup Vinaigrette


Quick and easy dinner in a bowl!

Whisk together the vinaigrette ingredients, and refrigerate until ready to use:

1 Tbsp. olive oil

1 Tbsp. apple cider vinegar

1/2 tsp. maple syrup

1/2 small clove garlic, minced or pressed (or use a bit of diced ramp or green garlic)

Salt and pepper to taste

Toss together the salad ingredients in a large bowl:

2 c. cooked brown rice, farro, or other chewy grain (cool or room temp)

4 c. lightly packed mixed greens- such as leafy lettuce, spinach, chard, beet or radish greens

1/4 - 1/2 c. thinly sliced crunchy veggies like carrots, radishes, kohlrabi, broccoli stems

2+ Tbsp. dried cranberries (or other dried fruit such as cherries, raisins, currants)

2+ Tbsp. sliced almonds (or walnuts, pine nuts, pecans)

1/4 c. snipped mint leaves

2 Tbsp. crumbled goat cheese or feta, optional

Toss the salad with vinaigrette, and serve in shallow or deep bowls of your choice.
