Baked Stuffed Veggie Subs


A quick, versatile, and tasty meal!

Preheat oven to 400.

Slice a bagette loaf in half lengthwise. Make a hollow in the loaf.

(Save the removed bread for crumbs or croutons later.)

Drizzle/brush the inside top and bottom with olive oil and minced garlic. Place on a parchment lined rimmed baking sheet, and crisp in the oven for a couple of minutes, until lightly browned.

Stuff with thin slices of tomatoes, peppers, onions, zucchini, whatever leftover veggies you have on hand. Add sliced, grated, or shredded cheese of your choice and an optional ample scattering of fresh herbs. If you wish, add other ingredients in your fridge that sound good to you such as sliced olives or mushrooms.

Wrap in foil and bake until cheese melts. Cut into 2”-3” sandwiches. Enjoy!
