Summer Squash & Bell Pepper Salad with Celery Seed Vinaigrette
Celery seed makes this a refreshing early autumn salad.
Combine in a bowl:
3 c. diced summer squash
1 c. diced sweet bell pepper
1/4-1/2 c. snipped celery leaves, optional
Whisk together vinaigrette:
2 Tbsp. olive oil
1 Tbsp. apple cider vinegar
1 tsp. maple syrup
1/4 tsp. celery seed
Dash garlic salt
Toss vinaigrette lightly into veggies (you may not need all of the dressing).
Optional: garnish with a scattering of feta.
Serve chilled.
